Gluten Free Pumpkin Muffins
Ingredients:
2 ¼ cup GF Flour
½ tspn baking powder
1 tspn baking soda
1 cup sugar
1 tspn cinnamon
3 eggs
1 can pumpkin
1/3 cup vegetable oil
¼ cup butter (melted)
1 tspn vanilla
Directons:
In a large mixing bowl, combine flour blend, sugar and cinnamon and whisk. In a separate bowl, mix all remaining ingredients. Combine all ingredients and mix until well blended.
Pour into 12 cup muffin tin filling each to the top.
Bake in a 325-degree oven for 25 min or until a toothpick comes out clean.
