Gluten Free Chocolate Chip Banana Bread
1⁄2 cup butter, softened
1 cup granulated sugar
2 eggs, beaten
3 bananas, mashed (for a more moist bread, try 4 bananas)
1 1⁄2 cups all-purpose GF flour
1 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 teaspoon vanilla
¾ cup chocolate chips
Preheat oven to 350º
Cream together butter and sugar.
Add eggs and crushed bananas.
Sift together flour, soda and salt. Add to creamed mixture.
Mix just until combined. Do not over mix.
Toss in chocolate chips.
Pour into greased and floured loaf pan.
Bake at 350º for 55 minutes or until toothpick comes out clean.
Keeps well, refrigerated.
