Gluten Free Almond Butter Chocolate Chip Cookies

Ingredients:

2 cups all-purpose gluten-free flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon kosher salt
½ cup butter (1 stick), softened
2/3 cup almond butter
1 ½ cups dark brown sugar
2 large eggs
2 teaspoons vanilla extract
1 bag (12oz) chocolate chips
flaky sea salt (optional)

Directons:

Preheat oven to 350.
line cookie sheet with a silicone mat or parchment paper.
Whisk together the flour, baking powder, soda and salt in a small bowl.
In a medium bowl, beat together butter, almond butter, and brown sugar. Beat until thoroughly blended.
Add the egg and vanilla and beat until combined.
Add the dry ingredients to the bowl and mix until well combined.
Toss in chocolate chips.
Drop tablespoons of batter on cookie sheet 2 inches apart.
Bake for 12 minutes. The edges will start to brown. The centers will remain chewy.
Let cool for 1 minute, then move to wire rack to completely cool. Makes about 3 dozen cookies.
Sprinkle salt on top of cookies before serving (optional).
