Gluten Free Banana Muffins
Ingredients:
In large mixing bowl:
- 3 over-ripe bananas, mashed
- 3 eggs (add one more if batter is dry toward the end)
- 2 tablespoons melted butter (or shortening for dairy free)
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 cup organic cane sugar
In small mixing bowl:
- 2 cups gluten free all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
Directons:
Combine all ingredients. Fill 12 cup muffin pan. Sprinkle brown sugar on top of batter. Bake in 350-degree oven for 20-24min.
