Gluten Free Banana Muffins 


In large mixing bowl:

  • 3 over-ripe bananas, mashed
  • 3 eggs (add one more if batter is dry toward the end)
  • 2 tablespoons melted butter (or shortening for dairy free)
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup organic cane sugar

In small mixing bowl:

  • 2 cups gluten free all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt


Combine all ingredients. Fill 12 cup muffin pan. Sprinkle brown sugar on top of batter. Bake in 350-degree oven for 20-24min.
